Félix Rocha Chardonnay 2022 is a white wine from the Lisbon region produced exclusively from the Chardonnay grape variety The vineyards are planted on clay-limestone soils from the Jurassic period and are over a decade old The sun's exposure to the northwest and the viticultural work guarantee high quality grapes The average yield is 60hl per hectare. The grapes are harvested by hand at the beginning of September at the peak of phenolic and alcoholic ripeness. The grapes are picked in 20kg boxes and quickly transported to the winery, ensuring that the quality is preserved. They undergo total destemming, soft pressing and cold static decanting. Fermentation takes place in used French oak barrels in a temperature-controlled chamber. After ageing, the grapes are glued and filtered, respecting the integrity of the wine. Ageing takes place for three months in used French oak casks using the bâtonnage technique It has a yellow color with greenish reflections. The aroma has rich notes of yellow fruit such as peach and pineapple, typical of the grape variety, combined with toasted nuances from the ageing in wood. On the palate it shows structure and freshness with good acidity that gives it a gastronomic character The finish is full and persistent With ageing in the bottle it gains complexity, highlighting notes of dried fruit The alcohol content is 13% with a total acidity of 6.60 g/l and a pH of 3.25 The reducing sugar content is less than 1.5 g/l. For best conservation, it is recommended to store in a horizontal position away from direct light in a cool place with some humidity.
