The Félix Rocha Kosher wine has a ruby color with bright cherry highlights The aroma is intense, revealing notes of ripe fruit, spices and nuts typical of the Castelão grape variety The palate is voluminous and slightly astringent with a balanced profile Well-placed tannins give a long and persistent finish The grapes come from the estate's oldest vineyards, planted more than twenty years ago on clay-limestone soils from the Jurassic period. The Castelão, Aragonez and Alicante Bouschet grape varieties are used and the entire winemaking process is carried out in accordance with Jewish standards, guaranteeing Kosher certification. The winemaking process follows Jewish principles and precepts, with strict supervision by a rabbi. From receiving the grapes to bottling, all operations are controlled and natural malolactic fermentation is used to improve the wine's balance. Aging takes place in stainless steel for natural stabilization followed by gentle filtration before bottling in May 2021 The wine has an alcohol content of 12.5% pH of 3.75 total acidity of 5.1g/L non-reducing extract of 32.8g/L and reducing sugars of less than 2g/L The ideal serving temperature is between 16 and 18°C. Pairs well with kosher food, Jewish cuisine in general and oven-roasted meats accompanied by roast potatoes.
