This Merlot has an intense garnet color with bright violet reflections. The nose reveals great complexity, combining quality wood with the grape variety's well-presented notes. Several aromas of ripe fruits stand out. The mouth is well-structured, full-bodied and harmonious. The aftertaste is rich in varietal aromas with well-integrated tannins and a long, tasty finish. The recommended serving temperature is between 16°C and 20°C The analytical data shows an alcohol content of 14.5%, total acidity of 6.1 g/L, pH of 3.56, volatile acidity of 0.63 g/L, non-reducing extract of 28.7 g/L and reducing sugars of 5.0 g/L. The Merlot vineyards were planted more than a decade ago in clay-limestone soils from the Jurassic period with a southwest-facing sun exposure. The average yield of the vineyards is 30hl/ha. The harvest takes place in early September at the peak of grape ripeness. The harvest is manual with rigorous selection. After total destemming, fermentation takes place over 16 days in a stainless steel wine press with a treading system and temperature control. This is followed by 18 days of maceration and malolactic fermentation occurs spontaneously in stainless steel. The wine was aged in French Allier oak barrels for 15 months. 10,000 bottles were filled and then spent another 12 months in the bottle. It is at its peak of evolution until 2025 and should be consumed in appropriate glasses between 16°C and 20°C.
