Félix Rocha Sauvignon Blanc is a light Lisbon regional wine made from the Sauvignon Blanc grape variety. The vineyards are planted on clay-limestone soils from the Jurassic period and benefit from the age of the plants, more than a decade old, exposure to the northwest sun and careful viticultural work, resulting in high quality grapes. The average yield from this plot is 60hl per hectare. The grapes are harvested by hand at the end of August, at the peak of phenolic and oenological ripeness. The grapes are harvested in 20kg boxes and quickly transported to the winery to preserve their quality. The process includes total destemming, soft pressing, clarification of the must by cold static decantation and fermentation at low temperature in stainless steel tanks, ensuring that the specific characteristics of the grape variety are maintained. Fermentation is followed by light fining and filtration to preserve the integrity of the wine. This wine has a citrus yellow color. In the aroma, the intense notes of Sauvignon Blanc stand out, with passion fruit, pear and green asparagus. On the palate, it's fresh with a good balance between structure, acidity and volume, providing a lingering finish. It has an alcohol content of 13%, a total acidity of 6.26g per liter, a pH of 3.06 and reducing sugars of 4.3g per liter. For conservation purposes, it is recommended to store in a horizontal position, away from direct light, in a cool place with some humidity. The expected shelf life is three years. It should be consumed in appropriate glasses at a temperature of 10 to 12 degrees Celsius. It is excellent as an aperitif and pairs well with grilled fish, sushi, seafood and light meals.
