Quinta de São Cristóvão wine has a garnet ruby color with good concentration and brightness. On the nose, it stands out for its intense aromas of red fruit and truffle. On the palate, it has a smooth entry, revealing structure and balance, as well as a marked and persistent character. The ideal serving temperature is between 16 and 18 degrees Celsius. In terms of analytical data, it has an alcohol content of 13.5 percent, a pH of 3.47, total acidity of 5.47 grams per liter in tartaric acid and volatile acidity of 0.44 grams per liter in acetic acid. The non-reducing extract is 32.2 grams per liter and the reducing sugars total 8.9 grams per liter. The grape varieties used in production are Touriga Nacional, Touriga Franca and Alicante Bouschet, from vineyards over 15 years old, planted on clay-limestone soils from the Jurassic era. The sun exposure is oriented to the southwest and careful cultivation throughout the year guarantees high quality grapes, resulting in an average yield of 60 hectoliters per hectare. The harvest is carried out mechanically, separated by grape variety. The grapes are transported immediately to the winery in an inert atmosphere to preserve freshness and aromatic potential. Fermentation takes place in stainless steel vats at 26 degrees Celsius, followed by a light post-fermentation fermentation. After natural stabilization, the wine is gently fined and filtered, preserving its original characteristics. It's already at an optimum age for consumption, but it could evolve well for another three to five years. Pairs well with slow-cooked meats, baked dishes, sausages and cheeses.
